Happy Tuesday! It just seems fitting to have a taco dish. I mean, Taco Tuesday! And who doesn’t love tacos? Today we made spaghetti squash taco bowls. My kids specifically asked my husband to get them spaghetti squash this week. I wanted to try something new and we all love tacos so this seemed like a great way to bring the two together. We paired it with salsa, avocados and plant-based chicken (also known as fake chicken).
SPAGHETTI SQUASH TACO BOWL
TIME:1 HOUR 30 MINUTES
DIFFICULTY: EASY

INGREDIENTS:
1 LARGE SPAGHETTI SQUASH
1/4 TSP SALT
1/4 TSP ANCHO CHILE PEPPER
OLIVE OIL SPRAY
1 CUP CHOPPED ONION (4 OZ)
1 AND 3/4 CUP CHOPPED ZUCCHINI (6.9 OZ)
1 AND 1/4 CUP CHOPPED YELLOW SQUASH (5.4 OZ)
2 CUPS CHOPPED MUSHROOMS (5 OZ)
1 TBSP CHOPPED GARLIC
1 TBSP OLIVE OIL
1/2 TSP OREGANO
1/2 TSP CUMIN
1/2 TSP PARSLEY
1/2 TSP TRADER JOE’S CHILI LIME SEASONING BLEND (SUBSTITUTE 1/4 TSP SALT AND 1/4 TSP CHILI POWDER)FIND IT HERE.
1/4 TSP ONION POWDER
1/4 TSP GARLIC POWDER
1 CAN BLACK BEANS (15 OZ DRAINED AND RINSED)
3/4 CUP SHREDDED CHEESE (VEGAN OR DAIRY, NOTE THAT VEGAN CHEESE DOESN’T MELT THE SAME AS DAIRY CHEESE)
DIRECTIONS:
PREHEAT OVEN TO 400 DEGREES FARENHEIT. CUT SPAGHETTI SQUASH IN HALF AND SCOOP OUT THE SEEDS WITH A SPOON. SPRAY BOTH SIDES WITH OLIVE OIL SPRAY. SPRINKLE WITH SALT AND PEPPER. LAY ON A BAKING SHEET CUT SIDE DOWN. BAKE FOR 45-5O MINUTES OR UNTIL THE SKIN CAN BE PIERCED EASILY WITH A FORK. WHILE THE SQUASH IS IN THE OVEN, HEAT THE OLIVE OIL IN A LARGE PAN ON MEDIUM HEAT. ADD THE ONION AND GARLIC. SAUTÉ FOR A COUPLE MINUTES AND THEN ADD THE REST OF THE VEGGIES. SAUTÉ VEGGIES UNTIL TENDER. ONCE SQUASH IS COOL ENOUGH TO TOUCH, USE A FORK TO SCRAPE OUT THE THE STRANDS. USE A LARGE BOWL TO MIX THE SQUASH, SAUTÉED VEGGIES AND BLACK BEANS. LOWER OVEN TEMPERATURE TO 350 DEGREES FARENHEIT. GENTLY MIX TOGETHER AND PLACE VEGGIE BLEND INTO THE SCOOPED OUT SQUASH SHELL. SPRINKLE WITH CHEESE AND BAKE FOR AN ADDITIONAL 20 MINUTES. ALLOW TO SET FOR 5 MINUTES. PAIR WITH SALSA, AVOCADO AND CHICKEN (VEGAN OR THE REAL THING).
