Cinnamon Banana Muffins

Happy Tuesday! That means it’s recipe time here on the blog. Today I’m sharing some delicious muffins that are vegan, gluten-free and packed full of protein. I love making muffins and since going mostly gluten-free I am happy to say that muffins are some of the easiest baked goods to make gluten-free. However, the drawback to gluten-free breads and muffins is that the protein content is quite low. I like to grab a muffin for a quick snack or on the go breakfast. Because of this I really want a good mix of protein, carbs and fat in my muffins and these work great with tracking my macros (you can read more about macronutrients in my post here). I am absolutely in love with these muffins. They are moist and dense with just the right amount of sweetness. They also make me forget that these are gluten-free and packed with protein. Gotta love when healthy tastes amazing.
P.S. My mom said that these would pair perfectly with peanut butter. Yum!
